How Deflating

I've now canned 18 quart jars of salsa, that is three double batches worth of work.

I realized this morning that I forgot to put garlic in at least one, if not two of those double batches. And now I'm worried I forgot it in the first double batch as well. That's at least 12 quart jars with no garlic, maybe all 18.

How sickening.
How deflating.
How irritating.
How maddening.

Can I cry?

I vote for opening the jar when you're ready to eat it, sprinkling it with garlic powder, stirring it and letting it sit for a minute, and then digging in with all the pleasure your salsa provides!

(For most of the jars of salsa I've canned this summer, I was a naughty and lazy girl and used the dried garlic.)

If it makes you feel better, I forgot the CANNING SALT on one of my tomato sauce days.

It was really sad.

Bummer. You could chop up some fresh garlic and place in the bowl right before serving. I often add a few fresh ingredients to canned salsa.
